Riley and I have been enjoying this little green hazelnut smoothie almost daily as of late. It is sweet, nutty, and inoffensively green. I tend to make a batch during her long afternoon nap and save a portion in her water bottle shown here. The straw is wide enough for smoothies and she loves holding onto its grippy sides, sipping away, usually in my lap as we read a few books when she wakes up.

You can use whichever nut butter you’d like here, I made a almond/hazelnut blend every few weeks and really love it here especially. Roasting half almonds, half hazelnuts, and blending in a food processor with a little salt.

I hope you enjoy this smoothie if you give it a try! We use EdenSoy soy milk if you’re looking for a nutritious plant milk to use in smoothies. It is what I call a “whole soy milk” using only soy beans and filtered water. It is packed with healthy protein, fat, and several nutrients. We’ve used it exclusively for years and I highly recommend!

GREEN HAZELNUT SMOOTHIE

1 serving
2 frozen bananas
a handful or two of frozen spinach
1 tablespoon of hazelnut butter see text above
1 cup of whole soy milk favorite brand

1.5 servings to share with Riley
3 frozen bananas
two handfuls frozen spinach
1.5 to 2 tablespoons hazelnut butter
1.5 cups whole soy milk

Instructions:

  1. Combine all ingredients in a high speed blender (I use a 48 ounce container).

  2. Blend on low, increasing to high slowly, using a tamper to press down the bananas and help the smoothie along.

  3. Once blending freely, pull the tamper away and let blend until silky smooth (another 30 seconds or so).

  4. Pour into a glass and enjoy. I store and serve Riley’s in her water bottle shown above, view here.
